Tortellini Pasta Salad #1 / Tortellini Day
This tortellini pasta salad was inspired by Tortellini Day! I love a pasta salad and haven't had one in awhile and it was fun and easy to make!
This is something you can make if you have some salad dressing (any vinagrette type), cold cuts and cheese and veggies in the fridge.
This year, Tortellini Day is on Feb. 13!
What I used:
- Buittoni Spinach / Cheese Tortellini
- SkinnyGirl Balsamic Vinagrette
- Roasted tomatoes (I just put some tomato chunks in the oven)
- Mozzarella (a string cheese cut into chunks)
One trick I like to do with the ham is to crisp it up in a little oil in a pan. It gives it some nice caramelization and crispiness. Of course, you don't have to do that -- you can just cut the ham into little pieces.
After this photo, I put the pieces of ham into a pan with oil.
I made the tortellini using the teapot water trick. You can see I am pushing the bounds of the volume allowed by this pot; the pasta and water are causing some changes in the surface tension. I scooped some water out before it boiled over. Haha! :)
I added everything to a bowl and then I added some balsamic vinagrette on top and then I mixed it together.
