Texas Chicken Hash
This was inspired by #DDD video from Lankford Grocery in Houston I saw on YouTube! I liked the idea of chicken with queso with potatoes and crunchy tortilla chips (they used tostadas), so I made my own version.

Also, on the Food Network, I didn't realize they had a recipe for it, but I was just making my own version anyways.
What I used:
- Valley Fresh Chicken
- Potatoes (tiny nibbler size I had)
- Tostitos Queso
- Peppers and Onions (I had batch cooked)
- Tostitos Tortilla Chips
I microwaved the potatoes for 2 1/2 or 3 minutes and then I smashed them up & I crisped them up in some oil in a pan on medium / medium-high
She had tostadas at the bottom for crunch. I put down some tortilla chips.
Then I added the potatoes, some chicken, queso, peppers & onions and microwaved it for ~1 1/2 or 2 minutes.
That's it! It's a really yummy combo I wouldn't have thought of. You get crunch from tortilla, cheesy queso, chicken and the potatoes all together. :)
