Spinach-Ricotta Lasagna Parcels +/- Chicken and Sausage
Updated: Jan 21, 2020

As I mentioned, one thing I like about watching cooking videos on YouTube videos is that you can get inspired to come up with your own recipes. This is a variation of the "Hunter's Chicken" Lasagna Parcel from a Twisted video on YouTube.

Instead of putting "Hunter's Chicken," I decided to try to put some microwaved frozen spinach, ricotta, rotisserie chicken and sausage for the filling. You could make a completely vegetarian version and leave out the chicken and sausage.

I cooked it with only 7 ingredients all together. I guess I added some salt & pepper to taste as well; I don't caught that. If you leave out the chicken and sausage; it only takes 5 ingredients: lasagna sheets, ricotta, spinach and Newman's Own alfredo sauce. I added a little Newman's own Alfredo sauce between the 2 lasagna sheets as before; you could leave this out & put ricotta there. I also put string cheese mozzarella on top too.
I just put some frozen spinach in a bowl and microwaved it for 60 seconds or so. I didn't even pat the frozen spinach dry as I do in some recipes because the extra moisture that comes with reheating frozen veggies is fine in this recipe. I mixed in some ricotta.

I put the microwaved frozen spinach, ricotta, rotisserie chicken and sausage in the middle of the 2 criss-cross lasagna sheets, which had Newman's Own Alfredo Sauce in between them.
I added a string cheese mozzarella on top of the parcel and baked it at 350 degrees for 20 min. and then broiled it for 5 min.
RESULT: Success! :)
We are good at this! How good does that look? It was an easy variation of something I saw in a Twisted YouTube video that I came up with from things in my fridge. It looks fancy in the parcels too.
Give it a try! We are good at this!
