Shrimp Pesto Pasta with Corn

This was inspired by a recipe from Geoffrey Zakarian of the Food Network (link). I never thought of combining pesto with corn and shrimp, so I wanted to try the flavor combo. :)

What I used:
- Shrimp**
- Rotini (I didn't have Orecchiette that was in the recipe).
- Cibo Naturals pesto
- Corn (a little from the salad bar)
- Chili flakes
** I already had sauteed a bunch of shrimp and used them for different recipes/meals. This is something I do to save time.
Because I already had the shrimp cooked (& didn't want to cook them again / overcook them), I made this and ate it as a cold pasta. It would taste good as a warm pasta as in the original recipe.
I just added a little pesto, corn, chili flakes and the shrimp on top of the pasta.
Quick and easy and looks fancy! The sweetness of the corn with pesto is unexpected & good. It is a light and bright.
You could also try substituting chicken for shrimp if you like.
