Quick Pulled Pork Chile Verde

This was inspired by Pork Chile Verde I had when I went to a meeting in New Mexico. I liked it so much I had it 3 or 4 meals in a row because it was authentic and I wasn't sure when I would be back. Haha! Qualifier: quick if you have pulled pork, haha! :)
As I mentioned, I liked to make pulled pork in my Instant pot plain or just with salt & pepper and then put it into individual batches for different meals later. See post
This is also a good meal idea if you have leftover salsa verde in the fridge. I quickly glanced at a bunch of different Pork Chile Verde recipes and a bunch of the different peppers people roast for Pork Chile Verde were also in salsa verde and I had a jar that had been in the fridge for awhile, so I decided to use that.
To make it more authentic and give it a kick, I ordered Green Chile Powder from New Mexico.

What I used:
- 8 oz. pulled pork (had been frozen and then defrosted in fridge.)
- 6 oz. salsa verde
- 5 oz. potatoes - pee wee / nibble size
- 1/4 teaspoon green Chile powder (can add more if you want more heat)
Add salsa, pork and chile powder to a pot on medium. Meanwhile I ran some water over the potato to clean them. And then I microwaved these little potatoes for 3 min.
I cut them in half, but you can leave them whole. If you have bigger potatoes; microwave them longer and then cut into chunks. Then I added the potatoes.


It tastes good right after you make it and the longer it sits, the more flavor it has! :) It only took 7-10 min. to make.
