Quick & Fancy Leftover Cupcake / Cake Trifle
Updated: Aug 24, 2020

This is a fast, easy, fancy looking dessert I came up with when I had some leftover cupcakes. I had seen some trifles before, but those are typically large desserts made for a group. I like to make small desserts just for a taste. :)
Also, you can make a bunch of these little desserts for a group and it seems better to have individual desserts for people these days in terms of germs.
Another thing, it actually might taste better the next day when all the cake and raspberries and cream melds together! So you can make it the day before you want to eat it or you have that to look forward to if you don't finish it. :)

You can also make cake pops or cakesicles from leftover cupcakes or cakes.

Cactus cake pops

What I used (per trifle):
- Leftover cupcakes (1 1/2 cupcakes per glass)
- 1/4 cup of frozen raspberries (you can use fresh too)
- Cool whip (a couple tablespoons)
- Glass or cup
- I like using these glass glasses I have because you can all the layers, but obviously it tastes good if you can't see the layers. :)

First, I took some frozen raspberries out. I let them thaw for 1 or 2 minutes and then I mashed them together.
I put some cake down, then I put some raspberry mash and then added some Cool Whip.
Then I kept repeating that until I got to the top of the cup -- with Cool Whip on top and a couple berries.
I added a couple of tiny basil leaves from my plant. Mint would be the obvious choice for a garnish. Haha! :)

That's it! Give it a try! We are good at this!
