Queso de Cabra y Tomate (Warm Goat Cheese w/ Tomato Sauce)

This is a quick spin on appetizer I used to get at a restaurant growing up, called Barcelona, which sadly closed (pre-pandemic). This is a way to mix up how to eat goat cheese -- warm!
They served it in mini- cast iron skillets. I don't have one. I made it in this microwave-safe and oven-safe dish.
I made it in the microwave actually, so it was super quick. You could bake it too.
It is served with toasted baguette slices. Yum!

What I used:
- Tomato Sauce
- Plain or Herbed Goat Cheese (not one with any fruit on the outside, haha; this one is Cypress Grove)
- Minced garlic (or garlic powder)
- Chili Flakes (if you don't like the heat, leave it out)
- Baguette slices (pre-sliced)
I put a little olive oil on some baguette slices. Then I baked them in the toaster oven for 5-7 min. or until golden brown. If you don't have a toaster oven. I would recommend toasting them in a pan or you could wait for your oven to preheat if you want.
While that was going, I just put some tomato sauce in this dish, ~1/2 cup. Then I put a teaspoon or so of minced garlic in with the tomato sauce. Then I added ~1 1/2 or 2 oz. of goat cheese in the middle. Then I put some chili flakes.
Then I microwaved it with a microwave cover over it for about 2 min. or until the tomato sauce was warm and the cheese melted a little in the middle.
I garnished with a little parsley.
That's it! Nice little tapas reminiscent of Barcelona that is super quick. Give it a try! We are good at this!
