Potato Bacon Corn Chowder

This was inspired by a Pin I saw from Kansas Pork / Casserole Crissy! It looked good! I had all the stuff basically in my kitchen, but I hadn't thought to put bacon, corn, and potatoes together for soup. I made a smaller portion for myself and I made some tweaks because I didn't have heavy cream and because I wanted to make a Shrunken Head potato (at first). Haha! :)

Since I saw saw Shrunken Head potatoes from Tesco and posted it for "Talk Like a Pirate" Day, I decided to make them ALL THE TIME! Haha! :)

You are basically making a roux with onions and bacon (torn in pieces), so added in a little flour. Then I added in everything else except for the potato.
To thicken it up, I added in some corn starch instead of heavy cream.

Instead of adding the potato directly to the chowder, I microwaved it for ~3 min. and then carved a shrunken potato head. Haha! :)
Here it is in the soup. Haha! :)

Then I just cut the potato into chunks and mixed it into the soup. It's really yummy!
Give it a try! We are good at this!
