Pancakes w/o Eggs or Milk! / Pancake Cereal
Updated: Aug 26
No Eggs? No Milk? No Problem! I came up with this pancake recipe because I ran out of eggs and milk! It turned out surprisingly well! You wouldn't know there are no milks or eggs; they look exactly the same! They are so fluffy! And they actually have less calories than the original recipe.
Pancake cereal is everywhere. They are so cute!
"No, this isn't a new boxed cereal that tastes like pancakes. Pancake cereal is made by cooking up a batch of teeny, tiny pancakes that are served in a bowl, then topped with any number of ingredients, like butter, maple syrup, fruit, chocolate chips and even milk."
I decided to use my new recipe to make the pancake cereal / mini-pancakes.
- 1 cup of Bisquick
- 1 tablespoon of corn syrup
- 3/4 cup of almond milk
I know what you're thinking! Corn syrup? That's bad for you. It's only 1 tablespoon for the whole batch -- 60 calories.
I thought of it because it has the same viscosity as eggs.
1.) Mix ingredients all together in a bowl.
2.) Turn non-stick pan on medium / medium-high.
3.) Spoon a small amount ~1 teaspoon on to the pan to make a mini-pancake.
-- Or you can put it in a squeeze bottle or bag and pipe it out.
-- Note: You can make normal-sized pancakes too! Haha! :)
4.) Flip after about 30-60 seconds. They cook fast! They are small.
Give it a try! We are good at this!
