Mini Twice Baked Potatoes

These bite-sized potatoes are really tasty! They are fun to eat and they are great for an appetizer for a party or for a snack or side dish everyday. Since they use small red potatoes, they cook really fast (~5-6 min. in the microwave.)

What I used:
- Small red potatoes (try to buy potatoes all the same size, so they cook in the same amount of time)
- Sargento Mexican cheese
- Daisy Sour Cream
- La Terra Fina Everything But the Bagel Dip (If you have onion dip that would work too)
- Cooked Bacon (for crumbles or pre-cooked bacon or bacon bits if you want)
- Chives (chopped)
I poked holes in the potatoes and added a sprinkle of water on top. Then I microwaved them for 6 min.
While the potatoes were in the microwave, I prepared the filling. I added a few tablespoons of sour cream and 2 tablespoons of dip to a bowl, as well as some cheese. I also chopped the chives.
Once the potatoes were done, I cut the potatoes in half lengthwise. Then I scooped out the potato and added it to the mixing bowl.

I mixed the potatoes into the filling mixture and spooned a little of the mixture into each potato half.
Then I sprinkled some more cheese on top and toasted them in the toaster oven for ~5 min. at ~400 degrees.
To top it off, I added some crumbled bacon, a tiny dollop of sour cream and chopped chives.
