Mini S'Mores Pies

This is a fun mini take on a campfire favorite! It is also an elegant dessert bite nice enough for a cocktail party, which is really easy to make! I made some mini bites and some extra mini-bites. You can just use extra chocolate you may have around.
This is Pie 2 of 2 I came up with inspired by Tau Day (Get it! 2 Pies for Tau Day (6/28); tau = 2 * pi, hahaha!)

What I used:
- Graham cracker crust from no-bake cheesecake mix
(I have made no-bake cheesecake recipes such as the No-Bake Cheesecake Truffles -- see below, so I had the graham cracker crust part left over. You can also buy Graham Cracker crumbs separately or just use graham crackers. :)
- Leftover chocolate (Mini-size chocolates (like Snickers or Milky Ways) and also some Ghiradelli chocolate square for the bigger ones -- They are the perfect size for a Graham Cracker
- Marshmallow Creme/Fluff
- Cooking Spray
Interlude with No-Bake Cheesecake Truffles :)
1.) Make your graham cracker crust bottom part of the S'Mores -- by mixing melted butter with graham cracker crumbs. (Skip if using Graham Crackers)
This is the same as making a graham cracker crust for a big pie -- just smaller.
- For the bigger size ones (which are still small), I used a muffin tin and cupcake cups.
- For the bite-sized ones, I used a small silicone mold I have.
2.) Spray cupcake cups or silicone mold with cooking spray.
3.) Pack the graham cracker mixture into the muffin tin / molds.
4.) Put in the fridge to set for at least 15-30 min.
(These are the same steps as making a graham cracker crust as on the box or any recipe.)
After setting up in the fridge
5.) Add your piece of chocolate on top (mini-size or Ghiradelli square)
6.) Add some marshmallow creme/fluff on top of each bite to complete the S'Mores bite.
-- I sprayed a spoon with cooking spray, so that the Marshmallow topping wouldn't stick to the spoon. You may not need to do this. :)
