Mini Frito Pies

You can eat a Frito pie in 1 bite out of your hand with this easy recipe I came up with. :) They are a pretty classy looking snack or appetizer made from Fritos too! :)
They are a Frito pie / nacho hybrid.
What I used (for these 17 chips):
- Fritos Scoops
- Ground beef (2-3 oz.)
(** You could substitute ground turkey or ground chicken if you want.)
- Old El Paso Taco Seasoning (1-2 teaspoons)
- Tomato Sauce (1 tablespoon or so)
- Sargento Mexican 4-blend shredded cheese
- Daisy sour cream (not shown in the picture above, but I like to add a little bit)
For this recipe, you have to use Fritos Scoops because they are bigger and you can put a filling in there.
I made a quick "chili" recipe. I don't like beans; that's why there aren't any in there. You could use your own chili recipe and then scoop it into the scoops.
1.) Preheat the oven to 350 degrees -- to melt the cheese. (You could also just use broil setting on the oven.)
2.) Brown the ground beef in a pan.
3.) Add some Old El Paso Taco seasoning and a little tomato sauce to the pan and mix them all together.
4.) Spoon a little "chili" beef mixture into the Scoop.
5.) Add a little shredded cheese on top of each Scoop.
6.) Put in the oven for ~5 min. or so -- just to melt the cheese.
7.) Add sour cream or other toppings as desired.
