mini-Bacon & Eggs Pan Pie

This is my mini-version of the monstrosity Bacon & Eggs Pan Pie that I saw from the BBQ Pit Boys on YouTube. I liked that it was a wacky idea, but what really struck me was how pretty the bacon and eggs looked. The bacon looked little roses within the eggs. Those rough and tumble guys probably admire the beauty of their dish too. Haha. :)


The mini-version is pretty much just a normal breakfast: 2 eggs, 1 piece of bacon, a parmesan crisp and for fun 2 Pringle chips (they used potato chips in theirs).


This version has about 284 calories and 22.2 g of protein.


To make it completely keto/low-carb, you could leave out the chips. With the chips, it's only about 2.3 g carbs.




One difference in this version was that they put a potato chip and cheese crust on top of the pie, but I put mine on the bottom, so you could see the little bacon rose and the eggs. They use probably a whole bag of chips and a whole bag of cheese. I just made a small portion.

I crumbled 1 Pringle chip into the parmesan crisp (vs. whole bag of potato chips).


Then I cooked 1 piece of bacon -- without oil in a nonstick pan. Usually I make bacon in the oven, which makes it crispy. In this case, I didn't want the bacon to be too crispy because I wanted to roll it into the rose.


I made 2 fried eggs. Then finally I crumbled 1 Pringle chip on top just to emphasize the potato chip and because it looked nice. Haha! :)


That's it. Fun, easy and pretty breakfast -- haha, with a couple potato chips for crunch and taste. I'm also going to experiment with using Sour Cream & Onion Pringles as a breading for chicken or pork. Stay tuned for that post!
