Mexican Lasagna #1
This is a Mexican spin on lasagna I came up with using some Pork al Pastor I had leftover. You could use chicken, ground beef / chicken, etc. if you would like or leave it out!
I called it Mexican Lasagna #1 like I did for Mexican Baked Eggs #1 because there are numerous versions you could make the mashup idea of Mexican Lasagna. :)
What I used:
- Barilla pre-cooked Lasagna sheet
- Pork al pastor (not shown)
- Diced tomatoes
- Peppers & Onions (I had batch cooked before)
- Sargento 4-cheese Mexican shredded cheese
- Mozzarella (more cheese!)
- Cream Cheese (more cheese! haha, but also some creaminess like ricotta)
Left & center: I put some tomato sauce down. The noodles do not need to be boiled, but it works better if they are wet (with sauce or running them under water) while you bake them.
Then I tore 1 Lasagna sheet in half for 2 pieces. Usually it turns out fine. This time 1 piece got cracked (no biggie!), so I put it on the bottom.
Right and 2nd row Left: Then I put in the filling: Pork al Pastor, peppers, onions, tomatoes, cream cheese, Mexican 4-cheese blend and mozzarella.
Finally 2nd row, right, I added the 2nd piece of Lasagna sheet, more tomatoes, shredded cheese on top!
Note: Obviously, you can make more layers if you want. I like to do two little layers because I get some lasagna taste, but it's pretty much low-carb. Haha! :)
Then I baked it for ~10 min. at 350 degrees. The pork was cooked here; the noodles just needed to cook.
Super cheesy and yummy!
