Mexican Baked Eggs #1
This is an easy breakfast / brunch (or anytime a day) idea I came up with that has some Mexican flavors! I called it Mexican Baked Eggs #1 because there are numerous different variations you can come up with!
Before I go to sleep, I put everything except for the eggs together and put it in the fridge. Then when I wake up, I crack an egg or 2 and bake it in the oven while I'm getting ready. It's really easy!
What I used:
- 2 eggs
- Salsa verde
- Frozen corn (I just put the frozen corn in as is; I didn't cook it)
- Daisy Sour Cream
- Sargento 4 Cheese Mexican shredded cheese
- Cotija Cheese
I just put some salsa in this oven-safe dish, then corn, some sour cream and the cheese. Then I put it in the fridge like this -- with some room for where to crack the eggs.
In the morning, I cracked some eggs and baked it.
Ta da! Easy hearty Mexican breakfast! Yum!
