Low Fat 5-Ingredient Mexican-Inspired Corn Salad

Here's a quick simple Mexican-Inspired Corn Salad that is low fat and only has 5 ingredients!
You can eat it as a side dish or you can use it as a topping on a pizza or other foods. Check out that post!
What I used:
- 2 ears of corn or 1 1/2 cups
(I used corn I roasted in my oven, but you could use frozen corn or canned corn w/o liquid. I think fresh corn or frozen corn would taste best in this type of salad. In other types of recipes like creamed corn or cornbread, canned corn is fine.)
- 3 tablespoons of sour cream
- 1 lime
I think lime juice adds a nice kick. If you don't typically have fresh limes on hand; you could try True Lime powder packets.
- 1/4 teaspoon of paprika or more
- 1 1/2 teaspoon of cotija cheese or more
It's a low-fat spin on Elotes. Basically the main difference is substituting sour cream for mayo for the creamy part. I just added in the sour cream and mixed in everything with the corn.
