Let's Go: Cajun Dirty Rice

This Smokin' & Grillin' wit AB YouTube video for Dirty Rice looked really good, so I had to try it. If you haven't had it, the name "Dirty Rice" may not sound that appealing, but it is really tasty. Haha. :)


Why Is It Called Dirty Rice and What Is It?

Dirty Rice is Cajun cuisine -- from Southern Louisiana. "The name comes from the appearance of the dish. The inclusion of all those tiny bits of browned meat, spices and vegetables makes the rice look dirty. Look at a bowl of rice next to a bowl of dirty rice, and you’ll quickly understand. Take a bite of each, and you’ll see that “dirty” isn’t always a bad thing." Haha. :)


"Dirty rice was a byproduct of South Louisiana’s abundant rice crop, Cajun cooking techniques and home cooks with a lot of mouths to feed and not a lot of money. Rice is plentiful in South Louisiana and inexpensive. It’s also hearty and can serve as the foundation of a satisfying meal at a low cost."

Attempt #1:


I was making a smaller amount than in the video and I made some adjustments based on what I had at my place.



What I used:

- 1 Andouille sausage

- 4 oz. of shrimp

- sushi rice (what I had)

- onions

- garlic spread (instead of minced garlic & garlic cloves - what I had)

- Cayenne Pepper

- Paprika

- Oregano

- Thyme

- salt & pepper


I didn't have a bay leaf or celery or bell peppers (forgot to get them. :) )



First, I cooked the andouille sausage and then added the onions in so they cook in the fat of the sausage & get that flavor as he recommended in the video. In the video, he adds the shrimp in towards the ends and lets the heat from everything coming together cook the shrimp. Shrimp do not take that long to cook. However, since my shrimp were big, I kind of par-cooked them (cooked them half-way or a little bit) and then took them out.



I added all the spices in with sausage and onions and mixed it all together. I added the rice back in. Another difference was that I cooked my rice separately and then added it back in at the end. In the video, he cooks the rice and everything together. I forgot that when I was cooking. Haha. :)


Then I mixed everything together and added the shrimp back in.




RESULT: Success! :)


We are good at this! It was a really good recipe from Smokin' & Grillin' wit AB and it turned out really well. Sometimes they call Dirty Rice, Cajun Fried Rice -- and they are pretty similar in how you cook them, but with different flavor profiles. A lot of foods are actually pretty similar even if they come from different international cuisines. :)
