Keto/No-Carb Cauliflower "Fried Rice"
When I saw cauliflower used as "rice," it intrigued me & I wanted to know how it tasted. I decided to make a Cauliflower "Fried Rice" to compare it with the Fried Rice I had made recently. I looked up some YouTube videos: MOMables/Laura Fuentes has a good video on how to make cauliflower rice.
Attempt #1:
You can cook it in the microwave or on the stove. I just did it on the stove since I was making it fried rice. I bought the cauliflower pre-cut & did it rice it or make it into smaller pieces.
I made the cauliflower rice and then I just added veggies & shrimp like the other fried rice.

Ingredients:
- Cauliflower (pre-cut)
- Assorted veggies from the salad bar
- Shrimp (or whatever meat you like or none at all if you want veggie fried rice)
- Soy sauce (1 or 2 tablespoons to 1 cup of "rice" or to taste)
In her video, she just sautes her cauliflower with some oil. Since my pieces were slightly bigger, I added some water (maybe 1/4 or 1/3 cup) and let it simmer for 10-15 min until it was soft.
Then I added the veggies and let them saute for 5 min. or so. I added some soy sauce & mixed it together.
I had already cooked shrimp, so I didn't cook them, so they wouldn't be overcooked.
I forgot to add the egg when I was cooking it, so I scrambled an egg separately & added it in at the end.
RESULT: Success! :)
We are good at this! It surprisingly tastes good & pretty much like fried rice. :) I was a little skeptical before I tried it. It's as easy to cook as rice.
Cauliflower is really healthy for you and has essentially no calories. One cup of cauliflower has 27 calories and 85% of Recommended Daily Values for Vitamin C! This whole bowl with the shrimp probably only 75-100 calories.
