Keto / Low-Carb Sausage and Spinach Frittata

This was inspired by a lowcarbafrica.com Pin I saw on Pinterest! It looked tasty and I wouldn't have thought to put all the ingredients together. I made some adjustments. I was making a smaller size portion fro myself and I had some of the vegetable ingredients cooked already.

I wanted to experiment with just putting everything in the dish and into the oven. Since I made a yummy lasagna by putting frozen spinach and defrosted (but not cooked) sausage in the dish and straight to the oven, I thought it might work.

What I used:
- 2 eggs mixed
- 1 Italian sausage
- Frozen spinach (just frozen)
- Bell pepper and onions (I had cooked a batch before and frozen it in smaller portions for different meals); see post
- Sour cream (~1 tablespoon)
- Shredded cheddar cheese
- Cayenne Pepper
- Thyme

I added everything to this dish. I didn't warm up the vegetables. The spinach was frozen and the bell pepper and onions, which were frozen were still cold. I took the sausage out of the casing and made it into chunks. Then I mixed in some eggs.
I set the oven to 350 degrees and put it in there while it was preheating -- for about 15 minutes or so.
Yummy! I actually made this for dinner, but it was so easy to make this nice hearty "breakfast" -- which is also low-carb -- any day of the week! That's it! Since it worked well, I've been trying out different variations and ideas for meal prep for easy breakfast / brunch or any meal really. Stay tuned!
Also I ate half when I made it and then put it in the fridge and ate some more the next morning for breakfast and it might have even tasted better later as cold leftovers. :)
