Individual Hasselback Sweet Potatoes w/ Roasted Marshmallows


I saw this on Delicious Miss Brown and it looked so good! It's also a good way to take a classic Thanksgiving side and make it in a way that you can serve it as individual (non-communal) portions.

What I used:

- Sweet potato

- Brown sugar (I didn't have maple syrup)

- Butter

- Cayenne Pepper

- Paprika

- Mini Marshmallows (what I had; she used large marshmallows)













Miss Brown had a good trick for cutting in the Hasselback technique, which also helps keep the potato rolling around when you're slicing it. You put 2 spoons on either side of it; this way when you slice if you hit the spoon -- you won't slice all the way through and the sweet potato stays in place.




I didn't have maple syrup, so I added some brown sugar and butter to a bowl with the spices and microwaved it for 30 seconds to melt it.


Then I poured it onto the potato. Because I made all the slits, the syrup was able to seep in and get on more surface area of the sweet potato! Yum!


To speed things up, I mostly cooked it by microwaving it for 6 min. in the microwave. Then I finished it off in the oven, so it could get real roasted flavor and caramelization.




Then I added some marshmallows and broiled it for 2 minutes to get some nice toastiness!
