Homemade Roasted Tomato Soup - First Attempt
I didn't really follow a recipe. Haha. :) I had seen roasted tomato soup made on the Food Network and on YouTube videos, so I decided to give it a whirl. This is for Soup Swap Day. :)
What is Soup Swap Day?
Started by Knox Gardner and his friend in Seattle, Soup Swap Day became an unofficial holiday celebrated all over the United States in 2006. Today, the holiday is celebrated by soup enthusiasts in many other parts of the world.
I cut up some tomatoes and put them on a baking sheet w/ some olive oil. I was planning on roasting them at 400 degrees for 40 minutes, but then I forgot about them because I was cooking other things and so they were in there for ~1 hour or so and they were super-roasted or a little burnt. Haha. :)
A lot of the recipes I found used heavy cream, I just substituted milk. I used the immersion blender to mix it all together. That's it!
It tasted good! It's not too hard to make fresh homemade soup; there is not that much active work. It takes awhile because you roast the tomatoes in the oven, but that is just putting them in the oven. Then it's just adding them to a pot, adding milk/cream and blending them. Give it a try! We are good at this!
