Greek Lemon Chicken Noodle Soup / Avgolemono


This is a Greek version of chicken noodle soup that I saw in Health Magazine. The difference is that it is a Lemon Chicken noodle soup with lemon juice and eggs. Also, there is supposed to be orzo, but I couldn't find it at the store, so I switched it to orecchiete. The authentic version is called Avgolemono.


I will try to look for the magazine and take a photo. I couldn't find the recipe online.


I love soup in the winter, but I eat Chicken Noodle Soup all year round!










What I used:


- Chicken breasts, shredded (they were already cooked)

- Chicken stock

- 1/2 or ~3/4 cup of lemon juice

- Leeks

- Carrots

- Onions

- 2 eggs

- Fresh dill (for taste and garnish)

- Salt & pepper











I cleaned and washed the leeks and carrots. I chopped them up into small pieces and got them searing into some oil and softened up. Then I added chicken stock and the shredded chicken. After 5-10 min., I added in the noodles and mixed in the eggs.


Then I added in the 1/2 or ~3/4 cup of lemon juice -- more than you would think. Don't be scared. I love lemon juice though. :)



Then right before serving, I added salt & pepper to taste and added some fresh dill.


Yummy! Here are some photos! It tastes really good! The leeks are a twist from onions in a chicken noodle soup and it's a fuller soup with the eggs and of course, you get lemon flavor!
