Going Super Meta-: Can I Turn Mushroom Stems into BBQ Ribs?

As you can tell from my posts, I'm not vegan, but this Goodful YouTube video was recommended to me and it intrigued me! They try to make baby back ribs out of mushroom stems. Going super meta- (original was on Bosh. TV'sYouTube Channel) is super fun and baby back ribs out of mushroom stems was definitely something I had to try for myself! :) I eat mushroom stems anyways if I cut them small and will saute them with the rest of the mushroom, so it wasn't too much of a stretch for me.

Monday, December 9, 2019, Attempt #1:

First, you make a marinade like you would for real ribs. Then you sear the stems on both sides to caramelize them. Next, you bake them in the oven for 50-60 min. Then you cover them with BBQ sauce.

When I was at the store, I forgot they used King Oyster mushrooms. I used a couple Portobella stems. I don't know if the type of mushroom you use matters that much for this recipe, it just has to have a big stem.

I made a similar marinade as in the video with some soy sauce, onion powder, garlic spread (which I find works well in recipes like minced garlic), salt & pepper.

Then I seared them on both sides to get some char like a real rib. She used a cast iron pan on top to press down on them. I just used another plate.

After charring them, they really did look like ribs!

Then I baked them for 50-60 min. in a 350 degree oven.

RESULT: Success. :)

We are good at this. With a period, not an exclamation point, haha. :) I may have left them in the oven too long and they got a little bit over-caramelized / burnt. I covered them with BBQ sauce anyways and...

...They did taste very similar to real ribs with some juiciness.

It is something I will probably do from now on with my big mushroom stems.

They shrunk down some with cooking and in the oven, so they were more riblet size. If you're going to try it, that's something to consider. They shrunk down to 1/3 or 1/2 the size.

Give it a try yourself and see if you think mushroom stems taste like BBQ ribs. We are good at this!
