Frito Buffalo Chicken Spinach Pie / Casserole/Dip



This is an easy chicken variation of the Frito Pie that I came up with. I made it in this small ramekin, but you can

multiply the recipe to make a bigger portion. :) There are Fritos in 2 places in the dish: in the filling and on top!


I called it a "Frito Pie" because it's a variation of the Frito pies I've seen. I think it's a casserole and if you make it with more sour cream, it could have more of a liquid-y consistency and be more of a dip.












What I used:

- Fritos Scoops

- Rotisserie chicken (hand-shredded, 1/4 cup)

- Philadelphia Cream cheese (~1 tablespoon)

- Daisy Sour Cream (~1 1/2 tablespoons)

- Buffalo / Chicken Wing Sauce

- Spinach (frozen spinach microwaved that I had pat dry with paper towels, ~1/8 cup)

- Mozzarella (1/4 to 1/3 oz. -- I used string cheese)


** If you want it to be more of a dip, then double the amount of sour cream.





I preheat oven to 400 degrees. In the ramekin, I mixed the Buffalo sauce and chicken together. In a separate bowl, I added the cream cheese and sour cream to the spinach and microwaved it for 30 seconds.) I mixed this together and put it in with the chicken.


I put in a few Fritos Scoops and then crunched them up. Then, I put a couple more scoops on top of the mixture for the "pie crust" and added crunch. Then, I put a little mozzarella on top for extra cheesiness. I put it in the oven for 5-7 min. just to melt the cheese and warm things up.



That's it! Give it a try! We are good at this! It's really good. See photos below. :)
