Fried Rice & Cleaning Out Your Fridge

Fried Rice is easy to make and a good way to clean out your fridge too! You can put any leftover meat and veggies in it. Obviously, you don't have to use leftover food. :) If you want a keto/no-carb option, check out my post on "Keto/No-Carb Cauliflower Fried Rice".
If you don't have an assortment of veggies around, you can stop by a salad bar like I did (link) and get some veggies to put in your fried rice.

If you have leftover rice, it's even faster. If you don't have a rice cooker or feel like making rice on a stove, there is also microwaveable 90-second or 2-minute rice from Uncle Ben's or whatever and sometimes your grocery store will have cooked rice for sale.
I don't think I made it traditionally, but I wanted to crisp up the rice. :)
I had shrimp and leftover ham cold cuts around, but as I mentioned above you can put whatever meat in it or none at all if you want veggie fried rice.

Ingredients:
- White Rice
- Any meat (or none at all if you want veggie fried rice)
- Assorted veggies (peas & carrots are typical; or you can leave them out if you don't like them)
- Egg (or you can leave it out, but I like the egg. And it's more protein.)
- Soy Sauce: (~1-2 tablespoons per cup of rice; to your taste)
First, I put a pan on medium/medium-high and sauteed the veggies and ham. Then I added an egg and scrambled it around.
Then, I pushed the eggs/meat/veggie mixture to the side of the pan.
Note: I did not cook the shrimp because they were already cooked & I didn't want them to be overcooked.
I pushed the egg/meat/veggie mixture to the side because I wanted to crisp up the rice. Iadded a little more oil and then added the rice to the empty half.
Then, I added soy sauce & mixed it all together. I added the shrimp on top (because they were already cooked). That's it!
