Fortune Cookies

I was inspired to make Fortune Cookies by Lunar New Year and by this recipe I saw on the Food Network app from Molly Yeh. It had never occurred to me to make my own Fortune Cookies until I saw her recipe. I only have 1 egg in the fridge right now, which I'm saving to make a Mardi Gras King Cake! Stay tuned! The recipe calls for eggs, but since so I decided to try corn syrup, which I have tried before as a substitute for eggs in baking successfully. As I mentioned before, if you are vegan, substituting corn syrup for eggs is something you can try or if you are not vegan and you just happen to not have eggs or if you just want to try it, that's a tip.

I used this website to write down fortunes on scraps of paper.

What I used:

- 1/2 cup flour

- 1/2 cup sugar

- 1 ~1 tablespoon of corn syrup

- 1/3 cup of water

I just whisked this over together into a thin batter.

I preheat the oven to 375 degrees.

This part was hard for me, but if you use a round cookie cutter or stencil it would be easier to make a circle.

The first batch was kinda rough.

Then I baked it until the edges were crispy about 10-15 min.

Then I put the fortune inside and then formed them into semicircles. I curved the the edges and put it in a compartment in a muffin tin to shape them.

These 2 turned out the best. The one curve on the cookie looked really good! Haha! :)

Give it a try! We are good at this!
