Fonio as Tomato Cheesy Polenta

Fonio is a versatile quick cooking African grain like grits or cous cous as I mentioned before in my other post (link)! Like cous cous or rice or any other grain, it's plain unless you add flavor! It has a somewhat similar texture to polenta, so I decided to use Italian flavors with it here.

What I used:
- Fonio (see link for more details, but basically you add a little water and 3-5 min. later you're done! It's fast)
- Mozzarella
- Tomato Sauce
- Garlic powder
- Onion powder

I just poured some sauce, garlic powder, and onion powder on top. I added some cheese and microwaved it for 1 min. or so until the cheese melted.
I put it in a different bowl to look fancier for the photo, but it tastes good in either bowl. Haha! :)
