2-Minute Easy Rotisserie Chicken Caprese

This is an even easier variation of the Easy Food Recipe YouTube Channel's recipe for Chicken Caprese I saw. I really like the Easy Food Recipe channel. They give a lot of good ideas for everyday meals and what I really like about it is that -- within the video after each meal, they have a screen with all the ingredients you need and the directions. It's very convenient if you are trying to cook and follow the video at the same time.
I think that's what's great about all these different YouTube channels. It can give you ideas for cooking and then you can put your own spin on them. :)

Their recipes are really easy, but I had some rotisserie chicken, so I used that instead and I also used the microwave, haha. :)
Even-though I did use rotisserie chicken and microwaved, I did follow along on the video as I was cooking for some hints.
"Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt and olive oil." https://en.wikipedia.org/wiki/Caprese_salad
So, chicken caprese is essentially tomatoes and fresh mozzarella on top of chicken. Yum!
Total prep and cook time: ~2 min

Ingredients:
- Rotisserie chicken
- 1 or 2 cherry tomatoes (from the salad bar)

- Fresh mozzarella (cute little Bel Gioso snack-size I have)
- Balsamic glaze
(I could have also gotten this from the salad bar, but I like it, so I bought a bottle.)
- Fresh basil (I didn't have any, but if I had, I would have used it.)

I cut the fresh mozzarella into pieces.
I took 1 or 2 tomatoes I got from the salad bar and cut them into pieces.
I put both the tomatoes and the cheese on the chicken.
I microwaved it all for 60-90 seconds.
I put a little Balsamic glaze on top.
I didn't have any fresh basil, but if I did, I would have just torn some pieces and put it on top.

RESULT: Success! :)
We are good at this! How good does that look? Tell me you wouldn't pay $15 for that in a restaurant. Haha. :) It took 2 minutes!
I ate it with some angel hair pasta which took 6-8 min. to cook; angel hair is thin and cooks fast. You could also eat it with ciabatta or other bread or salad if you didn't feel like cooking pasta.
