Easy Keto/No-Carb Taco (Cheese!)
On the Best Recipes Video YouTube channel, I saw shredded cheddar cheese made into a taco shell! It was a cool video & looked good! I had to try it! :)
It's a keto/no-carb taco shell and it's a funny variation of frico (parmesan crisp) that I wrote about before (link).
Another good recipe idea for those New Year's resolutions. Haha. :)
It's like making a little frico parmesan crisp, but it's bigger and this is with shredded cheddar cheese. You make them the size of a normal taco shell, so it's more cheese in the pan. I was skeptical that it was going to work.
First, set up a wooden spoon (or something with a rod/handle) over 2 glasses or cups.
-- You will hang your cheese shell over the rod to form the taco shell.
They did this in the video to form the taco shape. It looked cool! That's what I did too. :) It doesn't have to be a wooden spoon obviously; just something to help form the shape of the taco shell. You could use the bottom of a muffin pan too, but the benefit of using the handle of a spoon is that you only have to clean 1 spoon & not a whole muffin pan.
After you do that, in a non-stick pan on medium/medium-high, you put a big mound of shredded cheddar. After ~60 seconds in the pan (when that side is crisp), then you flip it and wait another ~60 seconds. The difference here is how you form the taco shape, which is fun!
RESULT: Success! :)
We are good at this! It looks like a taco shell! But it's cheese! :) I put ground chicken, salsa & sour cream inside. It tastes really good. It is super fast to make and is a keto/no-carb option too. :)
