Easy Filet Mignon Steak Dinner / Filet Mignon Day

Filet Mignon used to be something I would only order at steakhouses, but as I've been learning how to cook, I became more confident that I could cook it at home too!
August 13 is National Filet Mignon Day!
What I used:
- Filet Mignon from Omaha Steaks
- Loaded baked potato Omaha steaks
- Frozen spinach
- Some plain mushrooms (I had batch cooked before)
- Sour cream
- Blue cheese (I had it and I like beef and blue cheese together)
Note about the filet mignon:
I defrosted it in the fridge the night before I wanted to cook it. It was still a little cold to touch when I wanted to cook it, so I defrosted it in the microwave on defrost setting for 45 seconds. It was slightly cool / room temp when I cooked it. I made sure not to overcook it with the microwave. In general, err on the lower side of what you are thinking it may take. On the other hand, I didn't want it to be too cold when I grilled it because then it would be cooked on the outside and raw on the inside.
This was the second time I tried my Lodge grill cast iron pan. I was so happy with my grill marks on the Kofta burger, but steak grill marks would be the real test!
I put the cast iron pan on the stove on HI and let it get smoking hot -- probably 5 or 7 minutes.
Then I put the filet on the grill and left it there for 2-3 minutes without touching it. I covered it with a pan lid. I checked on my phone to make sure I didn't move it too early. Then, while still cooking the same side of meat, I did a quarter turn (rotated about 45-90 degrees) as I see them do on the Food Network...but I wouldn't know if it worked for another 1-2 minutes... :)
After this, I flipped it! I was so happy with the grill marks! It looked like a steakhouse!
I cooked it for a couple more minutes on the second side.
For the sides:
Potato: I just microwaved it for 2 min. or 2 1/2 minutes. Then I did put it in the toaster oven on broil to get a little browning and crust.
Spinach and Mushrooms: I microwaved the frozen spinach to thaw and cook it. Then I pat it dry with paper towels. Then I added a little bit of sour cream to it for a quick and healthy "creamed" spinach. I also mixed in some mushrooms.
Then I put it together! It took me 10-15 min. to make this steakhouse dinner! So proud of the grill marks! :)
