Easy 2-Minute Buffalo Chicken Dip
You can make buffalo chicken dip in 2 min. with ingredients you probably have in your fridge. This is another way I use rotisserie chicken for a variety of different meals.
This is enough for a pretty good size portion for 1 person. You can multiple to make more.
- 2-3 oz. of rotisserie chicken (no skin - shredded by hand)
- 1 teaspoon or so of hot wing sauce (or any hot sauce you like)
~1 tablespoon or 1 1/2 tablespoons of cream cheese
- 1 teaspoon of sour cream (if you don't have any - use a little more cream cheese)
- 1/2 oz. bleu cheese (optional)
(I got a little from the salad bar (see post); you can add as much as you want)
1.) Put all the ingredients in a bowl.
2.) Microwave for 45-60 seconds or until cream cheese is soft and warm, but not burnt.
3.) Stir together.
I like to eat it with tortilla chips. (I really like these Have'A Corn Chip tortilla chips. They taste like fresh tortilla chips in Mexican restaurants.) Or serve with crackers or on bread as a sandwich. You could even make it into a pizza if you want.
