Easy 2-Ingredient Spicy Frico (Parmesan Frico)
Updated: Aug 29, 2020

I came up with this when I was making Parmesan and Chipotle popcorn for Popcorn Day (link).

I didn't have finely grated parmesan (which works better for the popcorn); I had shredded parmesan. I also didn't have chipotle spices; I had chili flakes.
To try to make it coat popcorn better, I microwaved them together for 20-30 seconds or so. This didn't help with the popcorn (haha! :) ), but the result looked and tasted sort of like frico, so I decided to make it into a frico.

Parmesan crisps are Italian in origin (called frico) and the first recipes date back to around 1450! https://en.wikipedia.org/wiki/Frico

Ingredients:
- Shredded parmesan
(1 tablespoon for this size crisp)
- Chili flakes
Steps/Instructions:
1.) Put a non-stick pan (no oil) on the stove on medium/medium-high, put little piles of cheese in the pan.
2.) Sprinkle some chili flakes on to the cheese.
3.) After ~60 sec. or when golden brown, flip the crisp and wait another 30-60 sec.

That's it! You get a nice little spicy kick with the crispy parmesan cheese.
Give it a try! We are good at this!
