Crispy Blue Cheese Smashed Potatoes
These crispy smashed potatoes are really tasty! You can use them as a side or you can pick them up and eat them as an appetizer!
They only take amount ~15 min. or so to make with minimal prep work.
What I used:
- Small Yukon Gold potatoes
- Butter (melted to drizzle on after cooking)
- Roth Blue Cheese
- Daisy Sour cream
I rinsed the potatoes with water and poked some holes in them with a fork. Then I microwaved them until they work fork tender (~6 minutes).
I used the back of the fork to smash them (right picture). Then I put them in the toaster oven on Air Fryer setting until the edges were crispy and brown (~5-7 min.)
Meanwhile, I melted some butter in a bowl for 30 sec.
After they were crispy, I drizzled a little butter on each potato, added some blue cheese and added some sour cream
That's it! Fast & easy! You get crispy outside and fluffy inside and the nice funk & creaminess from the blue cheese and sour cream too.
