Creamy Blueberry Onion Bites / Lost Sock Day

This was inspired by something I saw from @fondoflife1 on Twitter. She made caramelized onions, blueberry with goat cheese on bagels. I had never heard of that flavor combo and it sounded good. I am going to make that someday, but I don't have onions or goat cheese. :)


I made my own twist based on what I had. This is a nice sweet and savory appetizer or snack. It's easy for everyday or you can make them for a party.





Lost Sock Day

"There are few mysteries in life that are as perplexing as the mystery of the missing sock. No matter how hard you try to keep pairs of socks together, invariably one of them ventures out into the netherworld never to be found again.

Lost Sock Memorial Day is a day to honor all those disappeared socks.


How to Celebrate

  • Throw out all the single leftover socks.

  • Use the leftover socks as cleaning cloths. Or spend the day making sock monkeys out of the socks that have sadly lost their partners to the sock blackhole.

  • Have a minute of silence for all the socks you have lost."

Ingredients:

- Pillsbury pizza crust (I could have and you could make your dough for a flatbread if you would like)

- Cream cheese

- Blueberries (I had frozen; fresh would work too obviously :) )

- Onion Powder

Steps/Instructions:

1.) Preheat oven to 400 degrees.



2.) Cut little pieces of dough into appetizer size portions -- as shown in the picture.

-- You could make a larger pizza size if you would like.

-- I shaped one like a sock for "Lost Sock Day". :)



3.) Baked the dough a little for about 6-8 min. or so until it is pretty much cooked.

-- Note: Since you are baking smaller pieces, it will bake faster than what it is on the packaging;







4.) Take them out and add a bit of cream cheese, onion powder, and some blueberries on top of each piece.

-- I just put the frozen blueberries on top as is -- they are warmed up in the oven.

-- Watch out: The baking sheets are HOT!




5.) Bake them for about 5-7 more minutes -- to soften & heaten up the cream cheese and warm the blueberries.


6.) Eat!


As noted above, this is a nice sweet and savory appetizer or snack. It's easy for everyday or you can make them for a party.
