Cranberry Cookie Bars / Easy Time Holiday Squares
This is an idea if you have leftover cranberry sauce! You can use them in these cookie bars or they are also called "Easy Time Hoilday Squares" by the author, Laura Miller from Windsor, OH.
This is from a cookbook I found at the library which is a collection of recipes from different people called: Wanda E. Brunstetter's Amish Friends Christmas Cookbook. There are lots of yummy recipes to try in here! In the "Easy Time Holiay Square" recipe, Laura recommends using pie filling. I decided to use cranberry sauce. :)
I just made half recipe.
What I used:
- 1/2 cup butter
- 3/4 cup sugar
- 2 eggs
- 1 1/2 tsp lemon juice
- 1 cup flour
- Cranberry sauce
- Powdered sugar (I forgot this, but you could top them with them.)
I put most of the cookie dough/batter (it's a wet dough) on parchment paper with cooking spray. I saved a little cookie dough to put on top of the filling a little bit.
Then I baked them at degrees for about 25 min.
Then I cut it into pieces. It taste really good with ice cream!
