Cous Cous w/ Pistachios / Pistachios Day

I thought this recipe was fun to post for Pistachios Day because it uses pistachios in a little bit of an unexpected way. :)

I found it in a Mary Engelbreit cookbook. She is a cookbook author from St. Louis where I grew up. Actually, there was a Mary Engelbreit store in the mall when I was little.


What I used:

- Cous cous

- Pistachios (without shells)

- Raisins

- Celery and onions (pre-chopped)

- Red peppers and onions (not shown)

- Better than Bouillon chicken soup base (chicken bouillon)

- 1 or 2 tablespoons of butter

- Cumin

- Nutmeg

- Black pepper

Here are the pistachios, red peppers, celery, onions and spices sautéing in some butter. Then I added the cous cous, water with al little chicken soup base.

Then I fluffed it up and put it on a plate! The pistachios add a nice texture and crunch. The dish has a Middle Eastern vibe. Yum! It's pretty easy to throw together too! :)
