Coffee Pulled Pork Flatbread

Here's another idea for what to do with pulled pork. I put it on a flatbread, but you could also do it on a sandwich. This is something I came up with after watching Diners Drive-Ins and Dives on the Food Network. It's very loosely based on a sandwich I saw from Black Bear in NYC -- just the idea of flavoring pork with coffee and brown sugar. I had never seen that before and it sounded interesting. They featured a pork belly sandwich, which was much more complex than this. :)
I made a big batch of plain pulled pork and froze some for the future as I have written about before:
What I used (for 3-4 oz. of pulled pork):
2 tablespoon of brown sugar
1 teaspoon of Instant coffee
1 tablespoon of apple cider vinegar
3 tablespoons of broth or water
For this flatbread,
- Pizza crust
- Sour cream
- Spinach
- Mozzarella
Microwave for 30 seconds to melt brown sugar Then put your pulled pork into the mixture.
It only takes 1-2 minutes to bring together! I would let it marinate for at least 1 or 2 hours in the fridge, but the longer you let it marinate the more the flavors absorb. I found it was best to do it overnight.
I used sour cream as the sauce for the flatbread. I added some spinach and cheese too.

The bitterness from the coffee tastes good with some sweetness from the brown sugar. Yum! Give it a try! We are good at this!
