Cinnamon Raisin French Toast Casserole / French Toast Day!


This is an easy baked spin of French Toast w/ cinnamon raisin bread. It is great for a brunch or a family or for 1 or 2 people to meal prep for a few days. You can also eat it for dessert; French Toast Casserole are very similar to Bread Pudding! Yum!

I used a French Toast Casserole recipe from Giada as inspiration, but I had cinnamon raisin bread and made some tweaks.








What I used:

- 10 slices of Cinnamon Raisin Bread

(I had cinnamon raisin bread on hand.)


- 4 eggs (** I actually used 6 eggs, but I recommend you use 4 eggs or 2:1 ratio of eggs to milk)

- 2 cups of milk

- pinch of salt

- Cooking spray


Optional topping:

- Powdered sugar

- Vanilla frosting (it melts like a glaze either when you put it on out of the oven or you can microwave it)






I whisked the eggs & milk together. (Use 4 eggs; 2 cups of milk of 2:1 ratio) and added a pinch of salt.


I generously sprayed the bread loaf pan with cooking spray.


Tip: Stack like bricks for more structural support.

This means first layer -- 2 whole pieces of bread; second layer -- 1 piece of bread in the middle w/ 2 halves piece of bread (one on either side). Then alternating it like that.


Right photo: I then tore a piece of bread in half and put 1 half on each side, so it would be scattered.


After I took these photos to demonstrate the "brick technique" then I took them out and poured some milk/egg mixture in the bottom, then I put my first layer down and poured some egg/milk mixture then the second layer, more egg/milk mixture etc. This bread loaf pan fit 10 pieces of bread this way.


Then I baked it at 350 degrees for about 35-40 min.




Here it is out of the oven. A little eggy; that why I recommend cutting back to 4 eggs. Haha.! :)




Then I put the serving dish on top of the bread loaf plan and flipped the French Toast Casserole...and miracle of miracles! It came out!


Then I topped it with some frosting, which just melt because the casserole was hot and it becomes like a glaze. I also added some powdered sugar.


As I mentioned above, it's good for a brunch or breakfast for a family or if you want to meal prep for 1 or 2 people for 4 or 5 days.
