Chicken Lumpia / Tip: Frying Egg Rolls etc.

I have made Lumpia from scratch before. These are from the frozen section of an international food store called Jungle Jim's. If the international food store doesn't specialize in one ethnicity, you can usually find some Filipino food there -- like Lumpia.

They are longer and skinnier than Chinese egg rolls. If you don't have a deep fryer (I don't), then you can use a small pot and pour 1 cup of oil or so in there, so that the lumpia can be covered with oil.


** You put the oil on medium-high and then wait 5 min. or until it's hot. Then you only want to fry 2 or 3 at a time. You don't want to crowd the oil with too many frozen egg rolls because this decreases the temp of the oil -- making your food soggy and not crispy.
