Chicken Cornbread Dressing

This Chicken Cornbread Dressing was inspired by "A Mouthful"'s YouTube video. It looked tasty & it was a good idea that I hadn't thought of: to make cornbread a complete savory meal. I made a mini-version.

What I used:
- Rotisserie Chicken (hand-shredded)
- Some veggies from salad bar (celery, corn, red pepper, peas, etc.)
- Jiffy Cornbread mix
- 1/2 cup of milk (instead of 1/3 cup of milk on the box)
- 1 egg (as on Jiffy box)
I cut up the veggies (if needed) & microwaved the veggies for 2 minutes because I wanted them to be soft (& not noticeable - haha). :)
I made the Jiffy cornbread mix w/ 1 egg and 1/2 cup of milk (instead of 1/3 cup of milk) so it would be more like dressing rather than bread.
I put the chicken & veggies in the cornbread batter, mixed it together and baked it at 400 degrees for 15 min. or so.
RESULT: Success! :)
We are good at this! It was tasty, filling and a complete meal. I only ate part of it for lunch and then had the rest over the next few meals.
It's a fun savory take on cornbread that makes it a complete meal.
