Chicken Chilaquiles Nachos

This was inspired by Chilaquiles, "a traditional Mexican breakfast dish consisting of corn tortillas cut into quarters and lightly fried."


I didn't have corn tortillas, so I used tortilla chips! This can be eaten for breakfast/brunch or lunch or dinner. This version has chicken, but you could leave it out or add something else, beef or shrimp.

What I used:

- Donkey Tortilla Chips

- Rotisserie Chicken (shredded)

- Herdez salsa verde

- Sargento Mexican cheese

- 2 eggs

I got 2 eggs frying in a pan on medium/medium-high.

I put the shredded rotisserie chicken in a bowl and poured some salsa in the bowl and mixed it together. Then I microwaved it for 1 min. 15 sec. to warm it up.

On the serving platter/plate, I put some tortilla chips and sprinkled some cheese on top. Then I microwaved it for 45 sec. just so the cheese could melt and the chips could warm up. If you microwave cheese much more than 60 sec., it may get burnt instead of melt-y.

I added the chicken/salsa mixture on top of the chips/cheese.

Then I added the eggs on top!

That's it! Super yummy! The egg yolk drips and becomes another sauce with the salsa.
