Cheesy Pork/Chicken, Lemon, Spinach Flatbread

This is a tasty recipe I came up with for pulled pork, but I think it would taste good with chicken too. That's why I put "/ chicken" in the title. :)

The recipe uses sour cream as the sauce for the flatbread / pizza. I got the idea to use sour cream / creme fraiche as a "pizza sauce" from this recipe I tried from ICAG of the Food Network. I made some modifications based on what I had at my place. The idea that stuck with me is using unexpected things for pizza sauces. :) The sour cream adds a nice tang to the flatbread.

Ingredients:
- Pillsbury pizza crust (you could make your own homemade dough for pizza or flatbread too.)
- Sour cream
- Mozzarella cheese
- Pulled pork
- Spinach
The pulled pork here was just plain with salt & pepper. You could use any leftover pulled pork you have. :)
I just used frozen spinach; you could use fresh spinach too.
If you don't have lemon juice, it will taste good -- the lemon juice adds some acidity & brightness to it.
Steps/Instructions:
1.) Preheat oven to 400 degrees.
2.) Put a little sour cream on the dough and spread it on like you would pizza sauce.
-- Note: I actually forgot that the instructions say to cook pizza dough for 6-8 min. before adding toppings and just added the toppings to raw dough. It turned out fine. :)

3.) Sprinkle on bits of pulled pork spinach and mozzarella on to the dough.
4.) Bake for ~15 min. or until the dough is golden brown.
5.) Add a spritz of lemon juice before eating -- adds some acidity & nice brightness to the flatbread. As I mentioned above, if you don't have it, that's fine.
6.) Eat! :)
You could make this for dinner or lunch any day. You could make smaller size portions as an appetizer for a cocktail party too.
