Cheesy Pesto Corn Hand Pie (Sort of Hello Kitty :) ) / Cat Day

For Cat Day, I decided to make a hand pie inspired by Hello Kitty. I thought it would be cute to use a corn kernel as Hello Kitty's nose and I thought it would be cute if that hinted towards the filling of the hand pie. What to put in with the corn? The flavors of this hand pie were inspired by this pesto pasta I made that was inspired by a pasta from Geoffrey Zakarian of the Food Network.
International Cat Day
International Cat Day is also referred to as World Cat Day in some countries and since its inception, it has been growing worldwide. While most countries now observe this unofficial holiday on August 8th, Russia celebrates National Cat Day on 1 March and the U.S. celebrate both International Cat Day and their own National Cat Day on October 29th.
What I used:
- Pillsbury pie crust
- Some frozen corn -- 1 on the outside for the nose! (This corn was fire-roasted with some char)
- Cream cheese
- Black food coloring
- Summer Sausage (not shown -- for the bow)
I roughly carved out Hello Kitty / cat shape in dough -- one for top and one for bottom. Then I put the filling in: some corn, pesto and a little mozzarella. Then I topped it and baked it.
While it was in the oven, I carved a bow out of a piece of summer sausage.
For the eyes, which were less successful because of my drawing technique (haha!), I added some black food coloring to cream cheese right out of the fridge. I just pressed on it in a ziploc bag until it was all mixed in. (I did try microwaving the cream cheese, but I found that it didn't need to be microwaved.)
The bow turned out well! And the nose! It was tasty also! This is an interesting flavor combo that you can obviously try in a normal hand pie or tart / pizza as well. :)
