Dec. 2 is Fritters Day!
Fritters are part of American cuisine and lots of different countries all over the world! There are 3 types of fritters -- type #1 is more of a donut and pastries, type #2 "tempura" fried meats or vegetables, type #3 are like cakes of veegetables or chopped up food in batter like this one.

I made a half batch

What I used:
- ~1 cup of Frozen corn (microwaved for 60 sec.)
- 2 or 3 tablespoons Jiffy Corn Muffin Mix (I didn't have corn meal)
- 2 or 3 tablespoons of Flour
- ~1/2 egg
- Shredded parmesan
- Parsley (I didn't have cilantro)
- Paprika
- 2 True Lime Packets (in place of lime juice)
- Sour cream for a sauce
There was a mishap with the egg, haha! But I only needed half of it anyways.

As I mentioned above, I microwaved the frozen corn for 60 sec. to warm it up. Then I chopped up some parsley (I didn't have cilantro).
Then I mixed everything together in a bowl. I used a glove so my hand wouldn't get messy.

I crisped them up in oil at medium high. The flour, egg, and cheese are binders, so it sticks together.
It's a really quick, easy and trasty appetizer or snack to make!
