Cheesy Buffalo Spinach Eggs
This is a quick and easy idea with some kick to literally spice up your breakfast or any meal really. :)
What I used:
- Frozen spinach (just frozen)
- Cream cheese
- Sour cream
- Buffalo Sauce
Before I went to bed, I just put some frozen spinach, cream cheese, buffalo sauce, and sour cream in this oven-safe dish on the sides and put it in the fridge. I left room to put the eggs. Of course, you could put all the spinach mixture on one side of the dish, haha! :)
The next morning I cracked a couple eggs and baked it in my toaster oven.

My toaster oven melts cheese really fast, so I didn't put the mozzarella on until the last minute. The eggs were pretty much cooked.
I added a little more Buffalo sauce for more kick. That's it! Give it a try! We are good at this!
