Cauliflower & Leek Casserole (from the DMV!)

This is a recipe I saw while at the DMV. :) I couldn't refer to it when I was at home, so it's from what I remember about the flavor combinations.
I wouldn't have thought to put cauliflower & leek together, but I thought I'd try it. I didn't really eat cauliflower too much, but I started to more when I made a keto/low-carb version of fried rice (link).

Leeks sort of look like large scallions and also sort of like bok choy. They have a mild onion taste.

I also made a modified version. They used heavy cream; I used a combination of cream cheese & sour cream so that it was lower fat & less calories.

What I used:
- Riced cauliflower (cauliflower already cut-up)
- Leeks
- Cream cheese
- Salt & pepper to taste
I sauteed the leeks for a little bit to soften them on low-to-medium heat. I wasn't sure if just putting it in the oven was going to soften the leaks. I preheat the oven to 350 degrees. I put everything in the little ramekin and put it in the oven for ~15 min. or so, so everything could come together.
RESULT: Success! :)
We are good at this! As I mentioned above, I wouldn't have thought to put cauliflowers & leeks together, but it was good!
