Can I Make "Sour Cream and Onion Biscuits"?

This recipe from Bon Appetit looked really good, but when I watched it, I didn't have enough sour cream to make it, so I had to wait until I stocked up again.


And even though I did stock up before I made, I didn't have green onions when I made it. Haha! :) So actually these are just Sour Cream Biscuits. I substituted some spinach flakes for green onions.

I have been baking lots of different things, but this was my first time baking biscuits from scratch!

There was a weird thing going on with my oven the day before I made them. There was this weird dark brown liquid that made the oven smoke when I was making some candied bacon (link)! I was afraid it was going to explode! I cleaned it out, but I was a little nervous before baking these biscuits the next day.


Attempt #1:

I made a half-batch (4 biscuits).

What I used:

- 1 1/4 cup of flour

- 5/8 cup sour cream

- 4-5 tablespoons of butter

- 1 1/4 tsp salt

- 1/2 tsp black pepper

- 7/8 tsp baking powder

- 1/4 tsp baking soda

- 1/2 tsp sugar

I didn't have scallions; I substituted some spinach flakes

Tip: Saving time when baking fresh biscuits/bread for breakfast/brunch

The recipe is pretty easy and there isn't any dough rising time (like for bread) or chilling of the dough (like for cookies)! However, in order to save time in the morning when I was half awake (haha! :) ), the night before I got all the dry ingredients together, measured and put them in the bowl and left it out on the counter (at room temp) while I slept.

The next morning:

I added the chunks of cold butter in with the dry ingredients. For biscuits, it's important for your butter to be cold -- it helps makes the biscuits flaky.

Then you smush the butter with your hands to make the pieces pea-sized. Then you add in sour cream. I liked that this recipe used sour cream instead of heavy cream like other biscuit recipes because it's lower fat.

Then I baked them at 425 degrees for about 20 min. Here are 2 before baking.

RESULT: Success! :)

We are good at this! As I mentioned, this was the first time I have made biscuits and they were really good! I suggest you give this recipe a try and if you want, you can measure all the dry ingredients and leave them out -- to speed up your morning breakfast/brunch.

As I mentioned above, I liked that this recipe used sour cream instead of heavy cream like other biscuit recipes because it's lower fat.
