Can I Make "Ricotta Gnocchi w/ Pancetta [Bacon] Tomato Sauce"?

Ricotta gnocchi are fun to make anytime (and fast: only takes like 10-15 min. total!) and it's also something you can do if your ricotta is going to expire. This recipe from Geoffrey Zakarian on Food Network app looked good!

I have made ricotta gnocchi before and it's much easier and faster than making homemade pasta, which I have also made (posts). So if you haven't tried making past, you could start with ricotta gnocchi. :)

What I used:
- Ricotta
- Flour
- Parmesan
- Egg
- Tomato sauce
- Bacon (didn't have pancetta)
- Fresh garlic
- Salt & pepper
I forgot to take pictures, but I just used jarred tomato sauce. I didn't have pancetta, so I used bacon. I crisped up some bacon in a pan with some oil on medium. I did actually chop up some fresh garlic (sometimes I get lazy & use garlic powder, haha!) and softened it in the bacon fat in the pan, yum! Then I added some tomato sauce.
Tip: I find adding a little fresh garlic really amps up the flavor of jarred tomato sauce. You could try garlic powder too. :)
Gnocchi
I just put all the ingredients together in a bowl and made the gnocchi dough.
The other time I made it, I used a fun technique with a string over a pot of boiling water to make the gnocchi, but here I just used a butterknife and chopped little pieces; this is what we call a "rustic" shape pasta. Haha :) Then I boiled them in water. They cook in 1-2 min.! That's part of the reason why it's fast to make homemade ricotta gnocchi!
I added some fresh basil on top from my plant.

That's it! Give it a try! We are good at this!
