Can I Make "Raspberry Chocolate Chunk Cookies" Recipes"? (#quarantinelife version)

This Raspberry Chocolate Chunk Cookie recipe I saw on Pinterest from @houseofnasheats looked good and a fun twist on chocolate chip cookies! I was mostly interested in putting frozen raspberries into the cookies. :)


I don't have eggs and I was experimenting with using pancake mix for flour -- so this is inspired by it and the #quarantinelife version.

She notes that you have to use frozen raspberries -- not fresh for this recipe because otherwise it will be a mushy mess. I like experimenting with freezing different foods and stuffing it into baked goods -- ever since I made peanut-butter stuffed brownies from Twisted on YouTube. It's fun because it's a science experiment and 2 things cooking separately and getting to the desired outcome at the same time. I've actually made a bunch of stuffed baked goods and come up with some of my own recipes. :)

Then I added some frozen raspberries into some of the cookies!




Then I baked them.



RESULT: Success! :)


We are good at this! Obviously, they don't look like her cookies because I made these without eggs, flour or baking soda, but they are really tasty!


I really like the tartness and texture of the raspberry with the chocolate chip cookie. :) It's a fun unexpected twist for cookies!
