Can I Make Muffins ?

For Muffin Day, I decided to try to make muffins. This Emma's Goodies YouTube video was really helpful, so I decided to try it. It's funny I have been using my muffin tins for a lot of things -- to make cheese taco shells or tarts, etc. -- but not muffins.
I decided to make a half-batch (so half of the ingredients listed below).
I also decided to make lemon-blueberry muffins.
- 2 1/4 cups All Purpose Flour
- 3/4 cups Sugar
- 3/4 stick of Butter
- 2 Eggs
- 1 cup Buttermilk ( Or milk + 1 tbsp vinegar)
- 2 1/2 tsp Baking Powder
- Anywhere between 1 1/2 -1 3/4 cups of Fresh Fruit, Chocolate Chips, Nuts.
- Flavorings (Vanilla, lemon zest, orange zest, cinnamon)
The recipe uses buttermilk, so before I made the rest of the batter I got to do one of my favorite hacks: making buttermilk by putting a little vinegar in milk.
When I was making my batter, I thought I did the calculations correct, but my batter seemed thicker than hers in the video. I knew I was going to add lemon juice to try to make lemon blueberry cupcakes, so I thought that liquid would help to thin it out.
When I added the lemon juice it helped. A lot of recipes recommend lemon zest, but I didn't have a zester, so I tried with lemon juice. I added 1 or 2 tablespoons; I didn't measure it.
Tip: One tip she gave that was helpful was how to keep the blueberries (or fruits) from sinking to the bottom during baking. Add 1 tablespoon of flour to them before pouring them into the batter.
Then I baked them at 390 degrees for 15 min. and 360 degrees for ~20 min. (as in the recipe).
RESULT: Success. :)
We are good at this. They are really good muffins! I gave myself . instead of ! because I didn't get the full lemon flavor I wanted; I like lemon a lot. :) I think maybe using lemon zest would help & I also don't think I added enough lemon juice. I'm going to try using lemon zest in my next lemon recipe.
